Onion Cheese Bread

Here's a savory quick bread that goes great with those Autumn Soups! (Sorry about some of the pics- it got dark as I baked the bread! Usually, Cheddar cheese does not look radioactive.)

Onion Cheese Bread- 8x8 pan
2 Tbs. butter
1/2 c. chopped onion
1 large egg, lightly beaten
1/2 c. milk
1 1/2 c. biscuit mix
1 c. shredded sharp Cheddar cheese
2 tsp. dried parsley flakes

Preheat oven to 400. Grease an 8" pan. In a small skillet, melt butter over medium high heat. Add onion, cook 3 minutes or until tender. Cool. In a medium bowl, combine egg and milk. gradually add biscuit mix, stirring just until moistened. Stir in cooked onion, 1/2 c. cheese and the parsley lakes. Spread batter in pan and sprinkle with remaining cheese. Bake 20 minutes or until golden brown.

Brown those onions-Combine egg and milk-Stir in biscuit mix till moistened-Add onions, 1/2 of the cheese and parsley flakes-Be interrupted by Xena, who is hoping for some of that radioactive cheese-Spread dough in pan and sprinkle with remaining cheese.
