Potatoes Alfredo

Maybe I've mentioned before how, in my opinion, potatoes are the perfect food. The only way that potatoes are not good is when they are cold, as in potato salad. No one likes potato salad. But in every other preparation, potatoes can't be beat. Take this recipe: Potatoes Alfredo. These go well with any meat- grilled, baked or fried. Give them a try!
 
 Potatoes Alfredo- 8 servings
8 potatoes, peeled and cut into french fry-like strips
1 c. chopped onion
2 Tbs. butter, melted
1 Tbs. salt
4 cloves garlic, minced
1 c. shredded Parmesan
2 c. cream or 1/2 and 1/2
Place potato strips into a large baking dish. Combine all other ingredients in a medium bowl and pour over potatoes. Bake, uncovered at 400 for about an hour, or until potatoes are tender.

  2. I like potato salad as well, without mustard, of course. This recipe seems one step away from being a casserole and a cheese choice from being funeral potatoes... :)
