BLT Salad

 Summer can't be over. Nope. Not yet. The last thing I want is cold weather and soggy days. So, here's my protest to the colder weather- a summer salad. It's a good one, too, with a homemade dressing and...bacon! The dressing goes on before it's served, so it turns soggy after a bit, but it's a delicious clinging-by-your-fingernails-to -the-end-of-summer dinner salad. I think you'll like it!

BLT Salad- 6 servings
1 lb. bacon
3/4 c. mayonnaise
1/4 c. milk
1 tsp. garlic salt
1/8 tsp. ground pepper
1 head romaine lettuce, shredded
2 large tomatoes, chopped
2 c. seasoned croutons
Cook bacon until crisp, drain, crumble and set aside. Blend mayonnaise, milk, garlic salt and pepper. Season to taste with salt. Place lettuce in a large bowl. Layer tomatoes, bacon, and croutons over lettuce. Toss with dressing. Serve immediately.

I halved this recipe for Bruce and I and it turned out fine. :)

  1. You go ahead and cling, hon, you bitter clinger, you. Eventually, you're going to have to let go and fall into a nice bed of crunchy fall leaves. :) Love this salad!
