Strawberry Cobbler

Let me assure you, this is a recipe you will want to keep! Strawberry season is just around the corner and this is a great way to enjoy that Springtime bounty.
Strawberry Cobbler- serves 6
1/2 c. sugar
1 Tbs. cornstarch
1 c. water
3-4 cups strawberries, hulled
2 Tbs. butter, diced
1 Tbs. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3 Tbs. butter
1/2- 3/4 c. heavy cream
Preheat oven to 400 degrees. Butter a 2 qt. baking dish. Combine sugar, cornstarch and water in a saucepan. Cook over medium heat, stirring constantly, until thick and hot. Stir in strawberries and remove from heat. Pour mixture into the baking dish and dot with diced butter. Sift together the flour, sugar, baking powder and salt. Cut in 3 Tbs. butter. Stir in cream. Mixture should be fairly soft. Spoon on top of berries. Bake for 25 minutes or until golden brown. Serve with ice cream!
