Lemon Horseradish Potatoes

I always seem to be at a loss when it comes to side dishes to serve with dinner. I'm just not very creative that way. So, when I ran across this potato recipe I thought I'd give it a try. These have lots of flavor and would go with just about any main dish. The recipe calls for new potatoes, but those little babies are expensive. I just cut regular potatoes into 1 inch cubes. Yum!
I did not take this picture, but I hope to take nice food pictures like this, someday.

Lemon Horseradish New Potatoes- serves 6
1/4 cup butter
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons prepared horseradish
2 tablespoons fresh lemon juice
1 1/2 pounds small new potatoes, unpeeled

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt butter in a 2 quart casserole dish in the oven. Stir in salt, pepper, horseradish and lemon juice. Place potatoes in dish and toss to coat with butter mixture.
  3. Cover and bake in preheated oven for 1 hour, or until potatoes are tender.

  1. yum!! I feel the same way about side dishes. We have a couple we really like but we really never branch out too far. We'll have to try this one!
