Hawaiian Baked Chicken

Ever since Peter has been home from New Zealand, he has been craving meat. Meat, as in chewing-on-bones, Polynesian-style meat. By chance I came across a blog written by a Samoan lady in Salt Lake who has lots of these kinds of recipes. Here's one that everyone in our house liked. What makes it different is the coconut milk in the marinade. You could grill this chicken too.

Hawaiian Baked Chicken
3 lbs. chicken
2 c. soy sauce
2 c. water
1 1/2 c. brown sugar
1 bunch green onions, chopped (save some for garnish)
1/4 c. white onion, chopped
1 tsp. minced garlic
1 tsp. sesame oil
1 (13.5oz) can of coconut milk
Remove any visible fat from chicken. Mix remaining ingredients, add chicken and marinate at least 4 hours or overnight. Bake, in a single layer, on a foil lined baking sheet for 1 hour at 375, turning after 30 minutes or grill. Top with reserved chopped green onion.
