I made WAY too much food for Christmas Eve this year. I swear I AM NOT going to make that much food next time! This was a new recipe that everyone really liked. Nothin' much better than pasta, garlic, pesto and Parmesan cheese!
Tortellini Bites- 24 servings
1 (32 oz.) container chicken broth, divided
1 (16oz.) pkg. refrigerated cheese tortellini
2 cloves garlic
2 tsp. prepared pesto
1/4 c. butter
2 Tbs. cornstarch
1/3 c. grated Parmesan cheese
Reserve 1 1/4 c. broth. Bring remaining broth to a boil in a large pot, add tortellini and cook until tender. Drain well. In a small bowl, blend cornstarch into the reserved broth. In a large saucepan, saute garlic and pesto in the butter for 2 minutes over medium heat. Add the cornstarch/broth mixture to the saucepan. Cook and stir until mixture thickens and comes to a boil. Place tortellini in a serving dish, pour the broth mixture and the Parmesan cheese into the serving dish and toss. Serve with toothpicks. Mmmmm.
