Father's Day Pie
Father's Day was a good day- we grilled some steaks and opened presents after church. I gave DH tickets to the Rose Parade on New Year's Day- something he's always wanted to do! (Won't that make for some fun blogging!) I made this pie for dessert:
Lemon-Lime Soda Pie
1 c. Sprite
1/3 c. white sugar
4 Tbs. cornstarch
1/2 (3 oz.) pkg. strawberry flavored jello
2 c. sliced fresh strawberries
1 (9 in.) baked pie crust
1 (8 oz.) Cool Whip
In a medium saucepan, cook Sprite, sugar and cornstarch over medium heat until thickened. Remove from heat and stir in gelatin. Place strawberries in pie crust and pour gelatin mixture over top. Let cool. Spread with Cool Whip. Cover and refrigerate overnight or several hours before serving.
Oldest Son and FDIL gave Dad a certificate for a Padres or Chargers game in San Diego, and DH made them sign it to make it a legal document:
