Strawberry Cobbler

I love strawberries! They are my favorite fruit. Best dessert ever: smashed, sugared strawberries over vanilla ice cream. So good. I've been trying a few new strawberry recipes this soggy Spring, one of which is my sister's Fresh Strawberry Muffins. Also so good, and rates as a Sister Recipe. I thought this Strawberry Cobbler was included in the so good category, and it got a thumbs up from everyone except Ben, who thought it needed more cobbler and less fruit. Give it a try and see what you think!

Strawberry Cobbler- 8 servings
1/2 c. sugar
1 Tbs. cornstarch
1 c. water
3 c. strawberries, hulled
2 Tbs. butter, diced
1 c. flour
1 Tbs. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3 Tbs. butter
3/4 c. heavy cream
Preheat over to 400. Butter a 2 qt. baking dish. Combine the sugar, cornstarch, and water. Cook over medium heat, stirring constantly until thick and hot. Stir in strawberries and remove from heat. Pour mixture into baking dish and dot with the diced butter. Sift together the flour, sugar, baking powder and salt. Cut in the 3 Tbs. butter. Stir in the cream. Mixture should be fairly soft. Spoon on top of berries. Bake for 25 minutes or till golden.

  1. Aren't those muffins good??? One of these days, we need to publish a sisters cookbook. Then we'd have an automatic wedding gift for ward memebers! :)
