Who out there loves Muddie Buddies!? Yes, we all do, don't we? Here's a twist on the traditional chocolate/peanut butter flavor- these are lemon! I made these today to take along on a trip this weekend to see our California kids. We can't wait!
LEMON BAR MUDDY BUDDIES
10 oz. lemon pie filling (1/2 can)
1 package white chocolate chips
1/2 c. (1 stick) butter
12 c. Rice Chex
3-4 c. powdered sugar
Melt the white chocolate, butter, and lemon curd in the microwave for 2-3 minutes, stirring every 30 seconds or so until melted and smooth. Add Rice Chex to a large container with lid, then pour the lemon mixture over top. Place the lid on the container and shake until cereal is evenly coated. Add powdered sugar to mixture and shake again until cereal is well-coated. Spread the mixture on parchment paper or two jelly roll pans and allow to cool completely. Store in an airtight container if you won’t be eating them immediately.
